Salted Caramel Cookie Pie

Last month we featured one of our amazing customer’s creations on our customer focus Friday in the form of Soraya’s cocktails and desserts cookie pie, made using our chocolate chip cookie dough.

We wanted to see how easy it really was to make, so we created our own and filled it with lots of tasty Bling Ingredients.

First, we weighed out 1.5kg of our salted caramel cookie dough, from one of our bulk 18kg boxes and popped it into the microwave for 60 seconds. This softened the dough and made it easier to press into the cookie pie tin.

Don't forget to grease and line your cookie pie tin to make it easier to release the pie after baking.

We formed the base and sides of the pie, using approx 500g of cookie dough for each section. By the way if 18kg is too much dough, then you can use two 780g pouches to make this cookie pie too.

Next we made the first filling, we melted a white chocolate spread and added some of our best-selling salted caramel sugar pearls and some tasty milk choc caramel cups, made by us, right here in sunny Yorkshire.

The filling needed to set before added the second layer so we popped the pie into the freezer and began making our second filling.

The second filling we melted a milk chocolate spread and mixed through lots of our bake stable caramel fudge. We then poured the mix into the cookie pie, popped it back into the freezer for 30 mins to set to then using the remaining 500g of cookie dough we added the lid to the pie.

We baked the pie at 180c for 25 minutes and allowed it to cool before placing into the fridge for approx. 8 hours.

The moment of truth was upon us. We pushed the pie out of the tin, the cookie dough had baked perfectly.

Finally, we sliced into the pie and marveled at the cross section, two layers of delicious chocolate spread, dotted with caramel cups and little pieces of fudge.

Our frozen cookie dough proved to be a real time saver when it came to making a cookie pie, we can't wait to make more with the rest of our cookie dough range. You can find all the ingredients we used below.
