Savoury sandwiches or sweet and crunchy cake?
We made these super realistic cake sandwiches by combining our sugar pearls with buttercream to create a realistic texture that mimics a real sandwich filling, and the range of colours we have available means that you could mimic any filling you fancy!
Our fillings of choice on this occasion were cheese and onion (mint), egg and cress (mint) and cheese and pickle (salted caramel). Here's how we did it:
Use any sponge cake recipe and spread a thin layer between three square or rectangle trays, once baked cut into identical slices that replicate the shape and size of bread slices, you should have 6 slices of bread in total.
Filling Recipe:
Ingredients
500g Unsalted butter
1000g icing sugar
1 tablespoon of vanilla extract
2 tablespoons of Whole Milk
30g Bling Mint Sugar Pearls (cheese and onion & egg and cress)
30g Bling Yellow Sugar Pearls (cheese and onion & egg and cress)
30g Bling Orange Sugar Pearls (cheese and onion)
5g Bling Green Sugar Pearls (egg and cress)
15g Bling Salted Caramel Sugar Pearls (Cheese and pickle)
10g Caramel Sauce
Method
Step 1: Combine icing sugar, butter, vanilla extract and milk in a mixer – mix until smooth and creamy.
Step 2: Remove two spoonsful of buttercream and set aside, then divide the remaining buttercream evenly into 3 separate bowls.
Step 4: Take the 2 spoonsful of buttercream that were set aside and evenly butter one side of each cake slice.
Cheese and Onion (mint buttercream filing)
Step 5: take one bowl of buttercream and add the yellow, mint and orange sugar pearls and mix with a spoon until well combined. Spread evenly across one slice of cake, add a second slice of cake on top and cut diagonally across both sides (Base how many times you cut your cakes on how small you want them to be, for bigger sandwiches only cut one diagonal line).
Egg and Cress (mint buttercream filing)
Step 6: Take another bowl of buttercream and combine in the yellow and mint sugar pearls. Mix well and spread across one slice of cake bread, Sprinkle on green sugar pearls. Place another slice of cake on top and cut into matching sizes as your previous cake.
Cheese and Pickle (salted caramel filling)
Step 7: Spread a thick layer of caramel sauce across each remaining slice of cake. Take your final bowl of buttercream and add the salted caramel sugar pearls. Mix until well combined and spread across one slice of cake and place the final slice on top. Slice to match your other slices of cake.
