No-Churn Caramel & Carrot Cake Ice Cream.

Transforming your favourite carrot cake recipe into an amazing, no churn ice cream is easier than you think and every bit as indulgent. Here’s a super-easy guide to making your own carrot cake ice cream at home with added extra Bling! Alternatively you can watch our video on Instagram here.

What you will need:

Step 1 - Caramelise the carrots

  • Melt the butter in a saucepan over a medium heat
  • Stir in the grated carrots, brown sugar, cinnamon sugar, salt and cook for 5 minutes or until the carrots soften
  • Add the ground cinnamon and ginger and cook for 1 more min or until fragrant, then remove the pan from the heat to cool slightly

Step 2 – Make the cream cheese base

  • Whisk the cream cheese, condensed milk, and vanilla extract until silky
  • Stir in the cooled carrot mixture and chill until ready to use

Step 3 – Fold in the whipped cream

  • Whip the double cream to medium-stiff peaks
  • Gently fold the carrot/cream cheese mix into the whipped cream
  • Fold in the salted caramel cookie dough pieces

Step 4 – Freeze

  • Transfer the mixture to an airtight container and smooth the top
  • Press some clingfilm onto the surface to prevent ice crystals from forming
  • Freeze for at least 4 hours, ideally overnight

Step 5 – Enjoy!
